She does not have the best diet and has gained weight due to her texture issues and medication. My teenage daughter has autism and is very picky about what she will eat. I am a very conscientious eater, but I struggle with chronic illness. I have Celiac, so I have to eat gluten-free. This is now the new staple in my kitchen. I am no foodie but I enjoy cooking at home and I enjoy delicious food. ![]() Every recipe has a picture ( for visual people like me, that is important), easy to read. So I give this the thumbs up! I loved that she had a picture for each product that went into the dish. The peanut salad was great too and the stuffed sweet potato. ![]() I have made many of these and have perfected rolling rice paper in my own way!!! The rainbow rolls with peanut sauce is yummy and light. The garden Bolognese was wonderful but again, I would puree the final product to make it a sauce and add a little meat.for my kids! I was absolutely happy with the final product but at least I am able to get my kids to eat more veggies without them even knowing!!!! The lasagna is AMAZING! I did incorporate 1lb beef ( again fussy kids) but honestly they had no idea how much veggies they were eating!!! I also made the vegan risotto and vegan mozzarella.the only non vegan stuff in the lasagna was the Parmesan cheese and beef.guys, my kids lapped this up!ġ0 min tacos was a hit also ( they had no idea they were eating mushrooms and walnuts). Guilty for throwing in a bit of chicken BUT the kids ate more veggies than otherwise. I made them smaller than the 8 the recipie stated it made and I freezed them too so in the am I would take 1-2 with a cup of coffee!! The Indian sauces were delicious but for my fussy kids, I pureed the sauce in my Vitamix and had this with rice. The breakfast cookies were a hit with all except my 11 yr old because she didn't like the oatmeal but she is 11!!! They were all delicious. It was important for me to be able to incorporate some of this in my kids diet too.(11 & 18).soooo, on saying that, I loved everything l made.
